Cashew Ambrosia Salad

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1 cup cashews
  • 1/2 cup soymilk
  • 2 tablespoons agave
  • 1/2 cup raspberries
  • 1/2 cup canned pineapple
  • 1/2 cup canned mandarin orange
  • 1/2 cup frozen strawberries
  • 1/4 cup shredded coconut

Recipe

  • 1 soak a cup of cashews for two hours the drain.
  • 2 blend cashews with soy milk and agave.
  • 3 pour mixture over chopped fruit.
  • 4 stir mixture and top with shredded coconut.
