Maple Flax Granola

Ingredients

- 6 cups old fashioned oats
- 2 cups coconut
- 2 cups peanuts (optional)
- 1 cup chocolate chips
- 1 cup raisins
- 1 cup maple syrup
- 1 cup brown sugar
- 1/2 cup canola oil
- 1 cup flax seed (optional finely ground)
Recipe
- 1 preheat oven to 350°f.
- 2 combine syrup, brown sugar and oil in large microwaveable bowl.
- 3 cook at high power for 3 minutes.
- 4 in another large bowl, combine oats, coconut, peanuts, chocolate chips, raisins and flax seed.
- 5 pour hot syrup mixture over oat mixture and stir well to combine.
- 6 spread granola mix out into two jellyroll pans.
- 7 bake 10 minutes then remove from oven and stir mixture.
- 8 return to oven and bake another 10 to 15 minutes or until golden brown.
- 9 cool to room temperature.
- 10 break apart into chunks and stoe in sealed container.
