Gumdrop Chews 1958

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 cup brown sugar
  • 1/4 cup vegetable shortening (crisco)
  • 1/4 cup butter
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla
  • 3 tablespoons evaporated milk
  • 1 teaspoon baking soda
  • 1 cup gumdrop, cut up fine
  • 2 egg whites
  • 1 cup brown sugar
  • 1 cup coconut

Recipe

  • 1 mix all the above ingredients.
  • 2 press into a 7 x 11 greased baking pan.
  • 3 press the gumdrop pieces into the dough.
  • 4 beat egg whites with brown sugar to make a soft meringue.
  • 5 fold in the coconut.
  • 6 spread evenly on top.
  • 7 bake 325 degrees oven f.
  • 8 bake 25 minutes.
  • 9 note: the topping is a double recipe thats the way my family like them.
  • 10 you can make one egg 1/2 cup sugar, and 1/2 cup coconut if desired.
  • 11 remove and cool on rack.
  • 12 cut when cool, into squares.
