Gumdrop Chews 1958

Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 cup brown sugar
- 1/4 cup vegetable shortening (crisco)
- 1/4 cup butter
- 1/2 cup granulated sugar
- 1 large egg yolk
- 2 teaspoons vanilla
- 3 tablespoons evaporated milk
- 1 teaspoon baking soda
- 1 cup gumdrop, cut up fine
- 2 egg whites
- 1 cup brown sugar
- 1 cup coconut
Recipe
- 1 mix all the above ingredients.
- 2 press into a 7 x 11 greased baking pan.
- 3 press the gumdrop pieces into the dough.
- 4 beat egg whites with brown sugar to make a soft meringue.
- 5 fold in the coconut.
- 6 spread evenly on top.
- 7 bake 325 degrees oven f.
- 8 bake 25 minutes.
- 9 note: the topping is a double recipe thats the way my family like them.
- 10 you can make one egg 1/2 cup sugar, and 1/2 cup coconut if desired.
- 11 remove and cool on rack.
- 12 cut when cool, into squares.
