Gainsborough Tart

Ingredients

  • 175 g shortcrust pastry
  • 45 ml jam (3 tbsp)
  • 25 g butter
  • 1 egg
  • 50 g caster sugar
  • 100 g desiccated coconut
  • 2 1/2 ml baking powder (1/2 tesp)

Recipe

  • 1 roll out pastry and line 20cm sandwich tin. prick base and spread with jam.
  • 2 melt butter, stir in egg, sugar, coconut and baking powder. mix well.
  • 3 spread mixture into pastry case.
  • 4 bake 350f 30-35 minutes.
