Easy Filipino Lamb Or Chicken Adobo

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 -3 lbs lamb (cubed, save bones) or 6 -8 chicken drumsticks
  • water (enough to submerge all meat)
  • 4 garlic cloves (mashed)
  • 1/2 cup soy sauce (estimated)
  • 1/2 cup vinegar (estimated)
  • salt & pepper (to taste)
  • 1 bay leaf
  • 1 -2 tablespoon lard (if sauteing) or 1 -2 tablespoon coconut oil (if sauteing)
  • 2 large russet potatoes (optional) or 3 medium red potatoes (optional) or 3 medium yukon gold potatoes, cubed (optional)

Recipe

  • 1 you may sauté meat prior to making this dish but in this version it is not necessary. if sautéing, heat lard/oil in large frying pan. add meat. fry on medium to med/high heat until golden brown. then follow instructions below --
  • 2 place meat (and bones) in large sauce pan.
  • 3 add just enough water to submerge all of meat & bones.
  • 4 bring to boil. as pan warms up, add vinegar, soy sauce, garlic, bay leaf and desired amount of salt and pepper. (remember soy sauce is already pretty salty.).
  • 5 simmer and cover for about 40 minutes. (or until chicken looks like it's starting to fall off the bone)stir periodically.
  • 6 if adding potatoes -- simmer for about 20 minutes add cubed potatoes, bring back to boil -- simmer for about 20 more minutes.
  • 7 remove bones prior to serving.
  • 8 if sauce is not slightly thickened after 40 minutes, you may use corn starch to do the trick -- however it will lighten up the color of the sauce.
  • 9 serve over steamed jasmine or calrose rice (jasmine is available in a brown rice).

Christmas Cherry Chews

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 1 cup rolled oats
  • 1 cup flour
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cold butter
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon almond extract
  • 1 cup coconut
  • 1/2 cup green and red maraschino cherry, halved
  • 1 cup pecan halves

Recipe

  • 1 set oven to 350 degrees.
  • 2 grease a 9" x 13" baking pan.
  • 3 in a bowl, mix together the first 5 ingredients.
  • 4 cut in the cold butter with a pastry blender until crumbly.
  • 5 press mixture into the prepared baking pan.
  • 6 bake for 8-9 minutes (don't overbake); remove and cool.
  • 7 lower the oven temperature to 325 degrees.
  • 8 in a bowl, combine all topping ingredients; mix well.
  • 9 spread topping over the cooled base.
  • 10 sprinkle with pecan halves over top.
  • 11 return to oven; bake for 30 minutes longer.
  • 12 cool, cut into squares.

Creamsicle Soda On The Rocks

  • 1 (12 ounce) can orange soda
  • 1/2 ounce coconut rum (i used barbarossa)
  • 1 dash irish cream (i used carolan's)
  • ice

Recipe

  • 1 fill 16 oz glass with ice.
  • 2 add rum, orange soda and top with a splash of irish cream.

Filipino Fried Banana

Total Time: 1 hr 5 mins Preparation Time: 35 mins Cook Time: 30 mins

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 14 ounces coconut milk
  • 1 tablespoon palm sugar (or sugar)
  • 1 ounce fresh ginger, grated
  • 2 ounces grated coconut (unsweetened)
  • 8 bananas, sliced into coins 1/3-inch thick
  • vegetable oil
  • ice cream

Recipe

  • 1 in a large bowl, mix flour, baking powder, and salt.
  • 2 add eggs, then slowly add coconut milk while stirring with a wooden spoon. continue stirring until batter is smooth.
  • 3 add sugar, ginger, and coconut, and mix. then let batter sit for 30 minutes.
  • 4 when batter is ready, heat enough vegetable oil to fry in a heavy pot or a deep fryer. add the coins from one banana to the batter. work the banana coins to ensure they are well battered, then add them one at a time to the hot oil. cook for about 3 minutes (until crispy and golden). remove with a slotted spoon and drain on paper towel.
  • 5 repeat previous two steps until all 8 bananas have been battered and fried.
  • 6 serve with ice cream.

Filipino Shrimp In Coconut Milk

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 6 tablespoons vegetable oil
  • 300 -500 g shrimp, raw (shelled or not)
  • 1 large sweet potato, cut into strips
  • 2 medium carrots, cut into strips
  • 2 medium bell peppers, cut into strips
  • 500 ml coconut milk
  • 250 ml water
  • 1 tablespoon ginger, sliced thinly in rounds
  • 1 tablespoon garlic, sliced thinly
  • 1/2 cup fish sauce
  • lemon
  • 2 cups rice
  • 4 cups water (for rice)

Recipe

  • 1 rice: 2 cups water to 1 cup rice. in a pot, boil, lower temperature to low, until there is no more water (approx 40 minutes). keep covered the entire time, you may look inside to see when it is cooked. stir with a fork when cooked. if you start cooking the rice before doing any of the rest, it should be done at the same time as the rest.
  • 2 peel and cut sweet potato into strips (like thin fries). peeling takes a while, so set a little time before apart. cut other vegetables into strips as well. slice up ginger and garlic, remembering to take off all the skin.
  • 3 in a wok, heat 6 tbsp of oil over medium high . (this may seem like a lot of oil, but there 1 sweet potato makes a lot of fries.) add sweet potato, stir fry until soft, not mushy. set aside on paper towel to absorb excess oil.
  • 4 keep the oil and fry ginger and garlic until lightly golden. add shrimp and fry quickly until pink. add a bit more oil if necessary. shrimp cooks very quickly, so don't overdo it. unless you want chewing gum in your meal --.
  • 5 once the shrimp is pink, add coconut milk, fish sauce and remaining vegetables. boil, simmer until vegetables are cooked, again do no overcook. it's important to keep a slight crunch to the vegetables.
  • 6 serve over rice with sweet potato, season generously with lemon.

Mango And Pineapple Individual Trifles

Ingredients

  • Servings: 4
  • 600 g madiera cake, crust trimmed and cut in half lengthways
  • 1 tablespoon coconut rum (malibu)
  • 500 g frozen mango cheeks
  • 1 ripe mango, cut into a dice
  • 1 cup diced pineapple
  • 4 mint leaves, finely shredded
  • 200 ml cream
  • 1 tablespoon caster sugar
  • 1 lime, zest of
  • 1/4 cup mascarpone
  • 2 tablespoons toasted shredded coconut

Recipe

  • 1 cut cake into 2cm cubes and divide amongst four large glasses. drizzle over malibu and set aside so that the cake will soak in the liquor.
  • 2 process frozen mango cheeks until smooth and pour over soaked cake. place into refrigerator.
  • 3 in the meantime, combine diced mango, pineapple and mint and mix well. spoon fruit over mango puree and return to refrigerator.
  • 4 whip cream and sugar together until thick and stir through lime and mascarpone. top trifle with cream and sprinkle with toasted coconut. serve immediately.

Filipino Beef Adobo With Coconut Milk

Ingredients

  • 3 lbs stewing beef chuck, cubed
  • 3/4 cup vinegar
  • 1 head garlic, peeled and crushed
  • 1/2 cup soy sauce
  • 4 bay leaves
  • 1 1/2 tablespoons whole black peppercorns
  • 1 tablespoon fresh ground black pepper
  • 1 tablespoon sugar
  • 4 tablespoons vegetable oil
  • 1 tablespoon salt or 1 tablespoon patis
  • 1 (12 ounce) can coconut milk

Recipe

  • 1 in a large pot combine the first 8 ingredients: beef, vinegar, garlic, soy sauce, bay leaves, peppercorns, ground pepper and sugar.
  • 2 let stand for 2 hours (traditional method is room temperature, i put in in the refrigerator).
  • 3 bring mixture to a boil then simmer about an hour or until the meat is tender.
  • 4 heat oil in a large skillet. use a slotted spoon to spoon out garlic from beef mixture. add garlic to skillet and cook until brown. use slotted spoon to add the beef to the skillet with garlic and continue to cook, stirring, until it is browned on all sides.
  • 5 add salt or patis to taste and the coconut milk. add the sauce from the pot that the beef simmered inches cook for 5 more minutes.
  • 6 good served with rice.

  • 1 (14 1/2 ounce) box graham crackers
  • 1 1/4 cups butter
  • 1 cup sugar
  • 1 egg
  • 1/2 cup evaporated milk
  • 1 cup pecans, chopped

  • 1/2 cup butter, softened

  • 5 topping: mix milk, margarine and sugar together in saucepan.
  • 6 boil for 3 minutes over medium heat.

  • 8 pour over cake while still hot.

  • 1 scoop coconut ice cream (can sub vanilla ice cream plus 1 tablespoon coconut milk)
  • 1 ounce rum
  • 1/2 ounce banana liqueur

Mussels In Fragrant Thai Broth

Ingredients

  • Servings: 4
  • 1/2 cup jasmine rice
  • 1 kg small black mussels
  • 1 tablespoon vegetable oil
  • 2 tablespoons green curry paste
  • 1 1/2 cups water
  • 1 1/2 cups fish stock
  • 2 teaspoons fish sauce
  • 2 teaspoons brown sugar
  • 1 2/3 cups coconut milk
  • 1/4 cup coarsely chopped fresh coriander
  • 4 green onions (shallots)
  • 1 tablespoon lime juice

Recipe

  • 1 cook rice in a large saucepan, uncovered until tender; drain. cover to keep warm.
  • 2 scrub mussels, remove beard.
  • 3 heat oil in a large saucepan; cook paste, stirring until fragrant.
  • 4 add water, stock, fish sauce and sugar; bring to boil.
  • 5 add coconut milk, return to boil.
  • 6 reduce heat to simmer for one minute.

Indonesian Yellow Rice

  • 2 1/4 cups long grain rice
  • 2 tablespoons vegetable oil
  • 3 shallots, finely chopped
  • 2 garlic cloves, finely chopped
  • 14 fluid ounces coconut milk
  • 2 cups water
  • 2 teaspoons turmeric
  • 8 fresh curry leaves
  • salt and pepper
  • 3 fresh red chilies

Recipe

  • 1 rinse rice.
  • 2 heat oil, then fry shallots and garlic.
  • 3 when shallots and garlic start to develop color, add rice and stir to coat in oil.
  • 4 add coconut milk, water, turmeric, curry leaves, and salt and pepper to taste.
  • 5 bring to the boil.
  • 6 cover and simmer 20 minutes, or until rice is cooked.

Creamy Apple Slice

  • 18 ounces butter recipe cake mix
  • 1 cup coconut
  • 125 g butter
  • 300 ml sour cream
  • 425 g tinned pie apples (i use unsweetened, but if you like it sweet, used sweetened)

Recipe

  • 1 melt butter, mix with coconut and cake mix.
  • 2 press into a well-lined slice tin and bake 10-15 mins (180'c).
  • 3 mix apples, sour cream and egg, spread on top of base, sprinkle with cinnamon.
  • 4 bake for a further 20-25 minutes.
  • 5 can be served warm with ice cream ( yum! ).
  • 6 or is also great cold -- even better the next day -- if it lasts that long!

Christmas Cherry Cake

Ingredients

  • 1 cup sugar
  • 4 eggs
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 lb cherries, candied
  • 1 lb dates, pitted
  • 1 lb pecans, chopped
  • 2 slices candied pineapple
  • 1/2 lb coconut

Recipe

  • 1 mix sugar, eggs, flour, baking powder, salt and vanilla.
  • 2 put cherries, dates and pineapple through food grinder on coarse. add ground fruit to sugar mixture; also add pecans and coconut. you will have to use your hands to mix.
  • 3 grease and flour angel food cake pan.
  • 4 place mixture evenly in bottom and cover with waxed paper, then brown paper. tie with string to close.
  • 5 bake at 350 degrees for one hour.
  • 6 when cool, pour sherry over and sit until christmas.

Gourmet Granola

Ingredients

  • Servings: 14
  • 1 cup butter or 1 cup margarine
  • 1/2 cup brown sugar
  • 1 teaspoon salt
  • 1/2 cup water

  • 1/4 cup oil
  • 2 eggs

  • 1 (440 g) can condensed milk
  • 1/2 cup cocoa
  • 1/4 cup desiccated coconut
  • 2 tablespoons rum (optional)
  • 1 cup desiccated coconut, extra, for rolling

Recipe

  • 1 mix first 5 ingredients together, making sure they are combined well.
  • 2 using about a tablespoon of mixture, roll into balls.
  • 3 roll each ball in coconut.

Dairy Free Sugar Free Chocolate Mousse

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 4 ounces unsweetened chocolate
  • 1 (14 ounce) can coconut milk
  • 2 egg yolks
  • 1/8 teaspoon salt
  • 1/2 tablespoon vanilla

Recipe

  • 1 cut chocolate into slivers with a large knife. place in a large bowl.
  • 2 mix coconut milk, egg yolks, stevia, and salt in a saucepan. heat over medium until steaming. do not boil. cook for 15 minutes until thickened.
  • 3 pour milk mixture through fine meshed sieve to remove lumps into chocolate.
  • 4 let mixture sit for five minutes.
  • 5 stir chocolate and milk mixture slowly and constantly until fully mixed.
  • 6 add vanilla and mix inches.
  • 7 pour into container such as a bowl or individual cups.
  • 8 refrigerate for at least 4 hours before serving.

Hot And Sour Sweetcorn Soup

Ingredients

  • Servings: 4
  • 1 corn on the cob
  • 1 tablespoon vegetable oil
  • 1 chili pepper, deseeded and sliced
  • 1 shallot, chopped
  • 2 stalks lemongrass, bruised
  • 2 spring onions, sliced
  • 1 red pepper, deseeded and sliced
  • 400 ml coconut milk
  • 850 ml vegetable stock
  • 2 fresh lime leaves (optional)
  • 175 g thread egg noodles
  • 1 lime, juice of
  • 1/4 cup coriander, chopped

Recipe

  • 1 slice the kernels from the cob with a sharp knife.
  • 2 heat the oil and add the corn, lemongrass, chilli, shallot, pepper and spring onion. cook for 4 mins, stirring occasionally.
  • 3 add milk, stock and lime leaves if using. bring to boil and cover. reduce heat and simmer for 15 minutes.
  • 4 remove lemon grass and add noodles cook for a further 5 mins until noodles are soft.
  • 5 remove from heat and add the lime juice and coriander. serve immediately.

Ingredients

  • 3 cups sliced bananas
  • 5 cups chopped peeled mangoes
  • 1/3 cup dark rum
  • cooking spray
  • 1/4 cup all-purpose flour
  • 3/4 cup regular oats
  • 1/2 cup sweetened flaked coconut, toasted
  • 6 tablespoons brown sugar
  • 3 tablespoons chopped crystallized ginger
  • 1/4 teaspoon salt
  • 3 tablespoons chilled butter, cut into small pieces

Recipe

  • 1 preheat oven to 375°.

  • 1 in a large bowl, mix potato flakes, eggs, milk, onion, garlic, curry, salt, pepper and worcestershire sauce. let stand for a few minutes until flakes have absorbed liquids.
  • 2 add ground beef and coconut flakes and mix well.
  • 3 form meatballs that are the size of large marbles.
  • 4 heat oil in frying pan and brown the meatballs all around in one layer in several batches.
  • 5 when all are browned, pour off some of the fat and add the soy sauce and water to the pan and scrape the bottom and sides of the pan throughly.

  • 2 combine the cream of coconut, lime juice, vegetable oil, soy sauce, 2 cloves crushed garlic, and 1/8 tsp ground red pepper; stir well. set marinade mixture aside.
  • 3 cut each chicken breast half into 4 pieces. add the chicken to the marinade; toss gently. cover and marinate in the refrigerator at least 4 hours.

  • 1 mix the butter and biscuits together and press into the base of a springform tin.
  • 2 sprinkle the gelatin over the water, allow to become spongy.
  • 3 dissolve by placing over boiling water or microwave for 30 seconds on medium.
  • 4 combine milk, egg yolks, and sugar in a pan; place on medium heat and cook, stirring until slightly thickened.
  • 5 pour in dissolved gelatin and lemon rind.
  • 6 set aside to cool slightly.
  • 7 beat lemon juice and vanilla into cheese, then gradually stir in the gelatin mixture.

Mandarin Freeze Dessert

Ingredients

  • 1/2 cup margarine or 1/2 cup butter
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup shredded coconut
  • 1 1/2 pints orange sherbet, softened
  • 1 1/2 pints vanilla ice cream, softened
  • 1 (8 ounce) can mandarin orange segments

Recipe

  • 1 remove ice cream from freezer and in a large bowl scoop out the amount needed of each flavor for the recipe. set aside to soften.
  • 2 in a sauce pan, melt the margarine/butter, add the flour, sugar, coconut and mix well, stirring constantly for 3 to 4 minutes.
  • 3 remove from heat and reserve 1/4 cup for topping.
  • 4 spray a 9-inch square pan with pam spray.
  • 5 press the rest of the mixture into the bottom of the pan. place in freezer to cool.
  • 6 return to the bowl with ice creams. they should be softened by now. if not, wait a few more minutes and then mix gently until they swirl and are still two distinct colors.
  • 7 spread over crust and top with reserve topping.
  • 8 cover and freeze 4 hours.
  • 9 cut and serve using mandarin orange slice to garnish.

  • 8 candlenuts (you can substitute large macademia)
  • 1 teaspoon fish, paste (fish sauce can be substituted)
  • 1 teaspoon ground galangal
  • 2 tablespoons ground nut oil
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 2 cups thick coconut milk
  • salt, to taste
  • sugar, to taste

Recipe

  • 1 put the following into your food-processor: onion, sambal, garlic, cumin, coriander, candle nuts, fish paste, galangal and process until you have a paste.
  • 2 heat the oil and fry the paste for approx 5 minutes, then add the lime leaves and the bay leaves.
  • 3 add the coconut milk and bring to the boil, then simmer for 15-20 minutes.
  • 4 add the prawns and cook until they turn pink, do not overcook them.
  • 5 taste the sauce and add salt and sugar to your liking.
