Ingredients
- 1 medium potato, cut into chunks
- 1 lb confectioners' sugar (or more)
- 1 teaspoon vanilla
- 1/2 cup coconut, shredded,sugared
Recipe
- 1 cook the potato in water.
- 2 while the potato is still warm,mash it and stir in the sugar and vanilla.
- 3 mix well and then add the coconut.
- 4 press mixture into a buttered pan.
- 5 cool and cut into squares.
- 6 dip the squares into melted chocolate and place on waxed paper to set.
