Nature's Cake

Total Time: 2 hrs 25 mins Preparation Time: 25 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 1 cup oats
  • 1 cup ground almonds
  • 1 teaspoon cinnamon
  • 1/2 cup shredded coconut (i used unsweetened)
  • 3 tablespoons applesauce
  • 1/2 cup nut butter (i used walnut and almond butters)
  • 1 cup raisins
  • 1/2 cup dates
  • 3 cups shredded carrots
  • artificial sweetener (stevia, maple syrup, whatever you like.)

Recipe

  • 1 first, use your food processor to shred the carrots.
  • 2 then switch blades and add the raisins and dates to the carrots and process.
  • 3 add applesauce and process till thoroughly combined.
  • 4 add remaining ingredients and process till fairly smooth. aha! no eggs so it's safe to taste now and see how much, if any, of a sweetener you'd like to add.
  • 5 pat into a loaf pan and refrigerate at least 2 hours.
  • 6 looks nice with some extra coconut sprinkled on top.
