My Oven 'fried' Potatoes

- 1 small red potatoes
- coconut oil
- salt
Recipe
- 1 preheat oven to 400 degrees f.
- 2 peel the potato (or leave whole if the skin is smooth and unblemished).
- 3 cut the potato into julienne slices about 3/8 inch (1 cm) thick.
- 4 rub a little oil into the palms of your hands. take a few slices and lightly coat them with oil from your hands. repeat until all slices are coated with oil.
- 5 arrange the slices on a baking sheet. bake on top rack of oven for about 25 minutes or til lightly browned on top.
- 6 remove from oven, arrange on a plate. salt and serve.
- 7 enjoy!
