Hawaiian Pineapple Cake

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 12
  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 eggs
  • 20 ounces crushed pineapple, undrained
  • 1/4 cup canola oil
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup evaporated milk
  • 1 1/2 cups sugar
  • 3/4 cup butter or 3/4 cup oleo
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped
  • 1 cup coconut

Recipe

  • 1 beat flour, sugar, soda, eggs, pineapple, oil, salt and vanilla togther 3 minutes.
  • 2 pour into 9x13 pan.
  • 3 do not grease or flour pan.
  • 4 bake 35 minutes in 350 degree oven.
  • 5 meanwhile bring the evaporated milk, sugar, butter and vanilla to a boil.
  • 6 add pecans and coconut.
  • 7 cook an additional 2 minutes.
  • 8 pour over cake when remove from oven.
  • 9 serve with cool whip or ice cream.
