Hawaiian Pineapple Cake

Ingredients

- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 2 eggs
- 20 ounces crushed pineapple, undrained
- 1/4 cup canola oil
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 cup evaporated milk
- 1 1/2 cups sugar
- 3/4 cup butter or 3/4 cup oleo
- 1 teaspoon vanilla
- 1 cup pecans, chopped
- 1 cup coconut
Recipe
- 1 beat flour, sugar, soda, eggs, pineapple, oil, salt and vanilla togther 3 minutes.
- 2 pour into 9x13 pan.
- 3 do not grease or flour pan.
- 4 bake 35 minutes in 350 degree oven.
- 5 meanwhile bring the evaporated milk, sugar, butter and vanilla to a boil.
- 6 add pecans and coconut.
- 7 cook an additional 2 minutes.
- 8 pour over cake when remove from oven.
- 9 serve with cool whip or ice cream.
