Granny Royse's Coconut Cream Pie

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 3/4 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 egg yolks
  • 1 cup coconut
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 3 egg whites
  • 6 tablespoons sugar
  • 1/3 cup coconut
  • 1 1/3 cups all-purpose flour
  • 1/2 cup vegetable shortening
  • 1/2 teaspoon coarse salt
  • 3 tablespoons ice water

Recipe

  • 1 in saucepan combine sugar flour and salt, gradually stir in milk, รข€˜cook and stir over medium heat until it thickens . cook 2 minutes longer.
  • 2 remove from heat add 1 cup of coconut. put a 3 egg meringue with 1/3 coconut sprinkled on top.
  • 3 stir in small amounts hot mixture into yolks return to hot mix, cook 2 minutes stirring constantly add vanilla and butter .cool and pour into baked shell.
  • 4 beat egg whites until stiff, add sugar beat again, spoon onto pie. bake at 400 until light brown.
