Granny Royse's Coconut Cream Pie

Ingredients
- 3/4 cup sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups milk
- 3 egg yolks
- 1 cup coconut
- 2 tablespoons butter
- 1 teaspoon vanilla
- 3 egg whites
- 6 tablespoons sugar
- 1/3 cup coconut
- 1 1/3 cups all-purpose flour
- 1/2 cup vegetable shortening
- 1/2 teaspoon coarse salt
- 3 tablespoons ice water
Recipe
- 1 in saucepan combine sugar flour and salt, gradually stir in milk, รข€˜cook and stir over medium heat until it thickens . cook 2 minutes longer.
- 2 remove from heat add 1 cup of coconut. put a 3 egg meringue with 1/3 coconut sprinkled on top.
- 3 stir in small amounts hot mixture into yolks return to hot mix, cook 2 minutes stirring constantly add vanilla and butter .cool and pour into baked shell.
- 4 beat egg whites until stiff, add sugar beat again, spoon onto pie. bake at 400 until light brown.
