Crunchy Potatoes For Durga Puja During The Nine Nights Of Navrat

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 2 potatoes, cut into even-sized diagonal cubes
  • 1 tablespoon coconut oil
  • 1 1/2 teaspoons mustard seeds
  • 4 -5 green chilies, finely sliced
  • 5 -6 fresh curry leaves
  • 20 cashews
  • 1 cup of freshly grated coconut
  • salt
  • water, as required

Recipe

  • 1 heat water in a pan.
  • 2 add salt and potato pices. allow the potatoes to blanch.
  • 3 on the side, heat coconut oil in a pan.
  • 4 add mustard seeds, green chillies, curry leaves and cashew nuts.
  • 5 once the cashews start to turn brown, add the potato pieces, salt and the grated coconut.
  • 6 toss and saute well.
  • 7 serve hot with roti made from rajgiri atta and sabudana khichdi (sago) on the side.
  • 8 enjoy!
