Mary's Pineapple Cake

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 10
  • 1 (20 ounce) can crushed pineapple
  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 eggs, slightly beaten
  • 1/2 cup margarine
  • 1 cup sugar
  • 3/4 cup evaporated milk
  • 1 cup coconut
  • 1/2 cup pecans or 1/2 cup walnuts, chopped

Recipe

  • 1 mix all the cake ingredients together with a spoon.
  • 2 bake in a greased 9 x13 inch pan for 35 to 40 minutes at 350 degrees fahrenheit.
  • 3 while the cake bakes make the topping.
  • 4 bring margarine, sugar and evaporated milk to a boil; stirring occasionally.
  • 5 boil for 5 minutes; remove from heat.
  • 6 stir in coconut and nuts.
  • 7 pour this mixture over the cake as soon as it comes from the oven.
