Healthy Crepes

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 2 eggs
  • 1 cup spelt flour
  • 1 cup milk (the dough is should be as thick as the heavy cream. don't worry if it's s not like that you can pour)
  • 1 pinch salt
  • 1 tablespoon coconut oil

Recipe

  • 1 in a mixing bowl, whisk together the flour and the eggs, add the milk, salt and coconut oil stirring to combine. (if you need pour club soda in it).
  • 2 heat a lightly oiled small flat pan like a frying pan over medium-high heat. brush with a little oil ,scoop the dough and pour into the pan using approximately 1/4 cup for each crepe. tilt the pan with a circular motion so that the batter coats the surface evenly and make it thin.
  • 3 cook the crepe for about 30 seconds, until the bottom is light brown. loosen with a spatula, turn and cook the other side. serve hot.
