Healthy Breakfast Slice Bars

Ingredients
- Servings: 12
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons honey
- 2 tablespoons coconut oil
- 1 banana
- 2 carrots
- 2 apples
- 1 1/2 cups weet-bix
- 1 cup oats
- 1/2 cup shredded coconut
- 1/2 cup black currants
- 1/2 cup macadamias
- 1/2 cup almond meal
Recipe
- 1 preheat fan forced oven to 180 degrees celcius.
- 2 line a 20 x 30 cm tray with baking paper.
- 3 beat eggs, add honey, vanilla and coconut oil.
- 4 mash bananas and add to mixture.
- 5 grate carrots and apples and add to mixture.
- 6 crush weet-bix and add to mixture.
- 7 add rest of dry ingredients.
- 8 combine with your hands and press into prepared tray.
- 9 bake for 20-25 minutes.
- 10 allow to cool slightly in tin.
- 11 slice into 12 breakfast portions or 18 snack portions.
