Healthy Breakfast Slice Bars

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 2 tablespoons coconut oil
  • 1 banana
  • 2 carrots
  • 2 apples
  • 1 1/2 cups weet-bix
  • 1 cup oats
  • 1/2 cup shredded coconut
  • 1/2 cup black currants
  • 1/2 cup macadamias
  • 1/2 cup almond meal

Recipe

  • 1 preheat fan forced oven to 180 degrees celcius.
  • 2 line a 20 x 30 cm tray with baking paper.
  • 3 beat eggs, add honey, vanilla and coconut oil.
  • 4 mash bananas and add to mixture.
  • 5 grate carrots and apples and add to mixture.
  • 6 crush weet-bix and add to mixture.
  • 7 add rest of dry ingredients.
  • 8 combine with your hands and press into prepared tray.
  • 9 bake for 20-25 minutes.
  • 10 allow to cool slightly in tin.
  • 11 slice into 12 breakfast portions or 18 snack portions.
