Healthy Apple-raisin Oat Bran Muffins

Total Time: 38 mins Preparation Time: 20 mins Cook Time: 18 mins

Ingredients

  • 1/2 cup flour
  • 1/2 cup oat bran
  • 1 1/4 teaspoons baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 egg
  • 2 tablespoons molasses
  • 1/2 cup raisins
  • 1/2 cup buttermilk
  • 2 tablespoons coconut oil
  • 1 large granny smith apple, chopped

Recipe

  • 1 in a small bowl combine the first 7, dry ingredients.
  • 2 in a another bowl whisk the egg , molasses, raisins, buttermilk, and coconut oil.
  • 3 add the dry ingredients into wet mixture and stir until just moistened.
  • 4 fold in chopped apple.
  • 5 coat 6 cup muffin tins with cooking spray and fill 3/4 full with batter.
  • 6 bake at 375 for 16-18 minutes or until a toothpick comes out clean.
  • 7 cool.
  • 8 serve warm.
