Healthy Apple-raisin Oat Bran Muffins

Ingredients
- 1/2 cup flour
- 1/2 cup oat bran
- 1 1/4 teaspoons baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 egg
- 2 tablespoons molasses
- 1/2 cup raisins
- 1/2 cup buttermilk
- 2 tablespoons coconut oil
- 1 large granny smith apple, chopped
Recipe
- 1 in a small bowl combine the first 7, dry ingredients.
- 2 in a another bowl whisk the egg , molasses, raisins, buttermilk, and coconut oil.
- 3 add the dry ingredients into wet mixture and stir until just moistened.
- 4 fold in chopped apple.
- 5 coat 6 cup muffin tins with cooking spray and fill 3/4 full with batter.
- 6 bake at 375 for 16-18 minutes or until a toothpick comes out clean.
- 7 cool.
- 8 serve warm.
