Creamy Coconut Mold

Total Time: 3 hrs 20 mins Preparation Time: 20 mins Cook Time: 3 hrs

Ingredients

  • Servings: 12
  • 1 1/2 cups cold water
  • 2 envelopes unflavored gelatin
  • 24 ounces cottage cheese
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (3 ounce) package cream cheese, softened,cut into small pieces
  • 1 cup coconut
  • 1 cup chopped nuts
  • 1/2 teaspoon almond extract
  • 3 cups fresh fruit, cut into bite-size pieces

Recipe

  • 1 very lightly oil a1 1/2 quart jello mold.
  • 2 put the water in a small saucepan and sprinkle gelatin over the water to soften.
  • 3 stir over low heat until it dissolves; set aside.
  • 4 combine cottage cheese, sweetened condensed milk, cream cheese, coconut, nuts and extract and mix well.
  • 5 stir in gelatin.
  • 6 refrigerate until slightly thickened.
  • 7 stir and pour mixture into mold.
  • 8 refrigerate 3 hours or until firm.
  • 9 gently run a knife around edges of mold to release.
  • 10 serve with fruit.
