Creamy Coconut Mold

Ingredients

- 1 1/2 cups cold water
- 2 envelopes unflavored gelatin
- 24 ounces cottage cheese
- 1 (14 ounce) can sweetened condensed milk
- 1 (3 ounce) package cream cheese, softened,cut into small pieces
- 1 cup coconut
- 1 cup chopped nuts
- 1/2 teaspoon almond extract
- 3 cups fresh fruit, cut into bite-size pieces
Recipe
- 1 very lightly oil a1 1/2 quart jello mold.
- 2 put the water in a small saucepan and sprinkle gelatin over the water to soften.
- 3 stir over low heat until it dissolves; set aside.
- 4 combine cottage cheese, sweetened condensed milk, cream cheese, coconut, nuts and extract and mix well.
- 5 stir in gelatin.
- 6 refrigerate until slightly thickened.
- 7 stir and pour mixture into mold.
- 8 refrigerate 3 hours or until firm.
- 9 gently run a knife around edges of mold to release.
- 10 serve with fruit.
