My Carrot Bread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 1/2 cup currants (raisins)
  • 1/2 cup coconut
  • 1/2 cup nuts
  • 1 cup canola oil
  • 3 eggs
  • 2 cups carrots, grated

Recipe

  • 1 preheat oven to 350.
  • 2 mix dry ingredients.
  • 3 add currants, coconut and nuts. mix.
  • 4 mix oil and carrots and add to dry. mix.
  • 5 put in loaf pan (or any shape you want). let it stand for 20 minutes.
  • 6 bake 1 hour.
  • 7 cool and remove from pan.
  • 8 keeps for 2 weeks.
