My Carrot Bread

Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 1/2 cup currants (raisins)
- 1/2 cup coconut
- 1/2 cup nuts
- 1 cup canola oil
- 3 eggs
- 2 cups carrots, grated
Recipe
- 1 preheat oven to 350.
- 2 mix dry ingredients.
- 3 add currants, coconut and nuts. mix.
- 4 mix oil and carrots and add to dry. mix.
- 5 put in loaf pan (or any shape you want). let it stand for 20 minutes.
- 6 bake 1 hour.
- 7 cool and remove from pan.
- 8 keeps for 2 weeks.
