Mary's Lazy Daisy Oatmeal Cake

Ingredients

- 1 cup quick oats
- 1/2 cup butter or 1/2 cup margarine
- 1 1/4 cups boiling water
- 2 eggs, well beaten
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 1/4 teaspoon clove
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 3 tablespoons milk
- 3/4 cup coconut, shredded
- 1/3 cup nuts, chopped
Recipe
- 1 combine oats, butter and boiling water. set aside for 20 minutes.
- 2 beat together the eggs, sugars and vanilla. sift dry ingredients and add, along with the oats. to the sugar mixture. beat well.
- 3 pour into a greased 9x13-inch baking dish. bake at 350°f for 30-35 minutes.
- 4 cool for a few minutes. then combine frosting ingredients, spread on cake and place under broiler for 1 minute or until frosting begins to bubble.
