Mary's Lazy Daisy Oatmeal Cake

Ingredients

  • Servings: 10
  • 1 cup quick oats
  • 1/2 cup butter or 1/2 cup margarine
  • 1 1/4 cups boiling water
  • 2 eggs, well beaten
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/4 teaspoon clove
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 3 tablespoons milk
  • 3/4 cup coconut, shredded
  • 1/3 cup nuts, chopped

Recipe

  • 1 combine oats, butter and boiling water. set aside for 20 minutes.
  • 2 beat together the eggs, sugars and vanilla. sift dry ingredients and add, along with the oats. to the sugar mixture. beat well.
  • 3 pour into a greased 9x13-inch baking dish. bake at 350°f for 30-35 minutes.
  • 4 cool for a few minutes. then combine frosting ingredients, spread on cake and place under broiler for 1 minute or until frosting begins to bubble.
