Macaroon Cake

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 12
  • 6 eggs, separated
  • 1 cup shortening
  • 1/2 cup margarine
  • 3 cups sugar
  • 1 teaspoon almond extract
  • 3 cups flour, unsifted
  • 1 cup milk
  • 8 ounces coconut flakes

Recipe

  • 1 grease a 10-inch tube pan.
  • 2 preheat oven to 300°f.
  • 3 in a very large bowl, cream the shortening, margarine, and sugar until very fluffy and creamy.
  • 4 add egg yolks and beat plenty more.
  • 5 add almond extract.
  • 6 blend in flour and milk alternately.
  • 7 add coconut flakes.
  • 8 beat egg whites until stiff and fold in gently but thoroughly.
  • 9 bake for 2 hours.
  • 10 cool in pan completely.
