Ingredients
- 1 cup blueberries
- 1/3 cup lemon curd
- 2 small shortcakes
- 1/2 cup whipped cream
- 4 tablespoons shredded coconut
Recipe
- 1 tear up shortbread into 2 cm pieces and line bottoms of parfait cups.
- 2 spoon lemon curd in a layer on top.
- 3 add a layer of fresh blueberries.
- 4 top with whipped cream.
- 5 sprinkle with shredded coconut.
