Healthy Cowgirl Cookies

Total Time: 31 mins Preparation Time: 20 mins Cook Time: 11 mins

Ingredients

  • 1/2 cup butter or 1/2 cup margarine
  • 1/2 cup low-fat yogurt
  • 1 cup brown sugar
  • 1/2 cup sucanat
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 cups oats
  • 1 cup dried cranberries
  • 1 cup chopped dried apricot
  • 1 cup sweetened flaked coconut
  • 1 cup chopped walnuts

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 beat butter, yogurt, sugar and sucanat together.
  • 3 mix in eggs.
  • 4 slowly add flours, and baking soda.
  • 5 by hand mix in remaining ingredients.
  • 6 drop by rounded tablespoon onto ungreased cookie sheet.
  • 7 bake 11-12 minutes.
  • 8 remove from sheet promptly and let cool on cookie rack.
