Healthy Cowgirl Cookies

Ingredients
- 1/2 cup butter or 1/2 cup margarine
- 1/2 cup low-fat yogurt
- 1 cup brown sugar
- 1/2 cup sucanat
- 2 eggs
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 3 cups oats
- 1 cup dried cranberries
- 1 cup chopped dried apricot
- 1 cup sweetened flaked coconut
- 1 cup chopped walnuts
Recipe
- 1 preheat oven to 350 degrees.
- 2 beat butter, yogurt, sugar and sucanat together.
- 3 mix in eggs.
- 4 slowly add flours, and baking soda.
- 5 by hand mix in remaining ingredients.
- 6 drop by rounded tablespoon onto ungreased cookie sheet.
- 7 bake 11-12 minutes.
- 8 remove from sheet promptly and let cool on cookie rack.
