Maraschino Cherry Pound Cake

Ingredients

  • Servings: 1
  • 1 1/2 cups shortening
  • 6 eggs
  • 1/2 teaspoon baking powder
  • 1 tablespoon butternut flavored extract
  • 3 cups white sugar
  • 3 3/4 cups all-purpose flour
  • 3/4 cup milk
  • 3/4 cup maraschino cherries, chopped
  • 3 ounces cream cheese
  • 1/4 cup butter, softened
  • 2 cups sifted confectioners' sugar
  • 1/4 cup maraschino cherries, chopped
  • 1/2 cup flaked coconut (optional)

Recipe

  • in a large bowl, cream the shortening and the white sugar together until fluffy. add eggs one at a time to the creamed mixture, beating well after each addition. add the flavoring.
  • in another bowl, combine flour and baking powder together. add these dry ingredients alternating with the milk to the creamed mixture. stir 3/4 cup chopped cherries into the batter.
  • pour batter into a greased tube pan, and bake at 350 degrees f (175 degrees c) for 1 1/2 hours.
  • to make the frosting: cream together the cream cheese and the butter in a small mixing bowl. gradually add the confectioners' sugar. stir in the 1/4 cup cherries and coconut. frost cake when cool.

European Muesli

Ingredients

  • 1/2 cup wheat germ
  • 1/2 cup sesame seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup shelled pumpkin seeds
  • 1/2 cup chopped cashews
  • 1/2 cup chopped almonds
  • 1/2 cup shredded coconut
  • 1/2 cup rolled wheat
  • 3 cups rolled oats
  • 1/4 cup oil
  • 1 1/4 cups honey
  • 1 1/2 teaspoons vanilla extract

    Ready Time: 2 hrs 20 mins

  • preheat oven to 225 degrees f (110 degrees c). lightly grease a large baking sheet.
  • in a large bowl, mix together wheat germ, sesame seeds, sunflower seeds, pumpkin seeds, cashews, almonds, coconut, rolled wheat and rolled oats.
  • in a medium saucepan over medium heat, mix oil, honey and vanilla. cook and stir just until the mixture is hot. stir into the wheat germ mixture.
  • spread the mixture on the prepared baking sheet. bake 1 1/2 hours in the preheated oven, stirring approximately every 20 minutes, until golden brown.

Apple Dapple Cake

Ingredients

  • Servings: 1
  • 1 cup vegetable oil
  • 1/2 cup butter, softened
  • 1 1/2 cups white sugar
  • 3 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 cups diced apple without peel
  • 1 cup flaked coconut
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1 cup brown sugar (optional)
  • 1/2 cup butter
  • 1/4 cup milk

Recipe

  • preheat oven to 325 degrees f (165 degrees c). grease and flour one 10 inch tube pan.
  • combine oil, butter or margarine, and sugar together. beat well with a mixer. add eggs, flour, baking soda, salt, and vanilla; mix well. stir in apples, coconut, raisins, and walnuts. pour batter in prepared pan.
  • bake for 90 minutes. remove cake from oven. let it cool in the pan for a few minutes, and then remove from pan.
  • if desired, make glaze. in a small saucepan, heat brown sugar, butter or margarine, and milk. bring mixture to boil, and stir for 1 minute. pour over warm cake.

Coconut Pecan Pie

  • 1 (9 inch) unbaked pie crust
  • 1/2 cup butter, melted
  • 3 eggs
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups white sugar
  • 3 1/2 ounces flaked coconut
  • 1/2 cup chopped pecans, or as needed

  • preheat oven to 350 degrees f (175 degrees c). press pie crust into a 9-inch pie dish.
  • beat butter, eggs, lemon juice, and vanilla extract together in a bowl; beat in sugar until smooth. fold coconut and pecans into butter mixture; pour into pie crust.
  • bake in the preheated oven until pie is set in the middle, 45 to 50 minutes.

sweet potato cheesecake

  • 1 cup all-purpose flour
  • 1/4 cup white sugar
  • 1 1/2 teaspoons lemon zest
  • 1 1/2 teaspoons orange zest
  • 1/2 cup butter, chilled
  • 1/2 cup flaked coconut
  • 1 egg yolk, beaten
  • 1 tablespoon water
  • 3 (8 ounce) packages cream cheese, softened
  • 3/4 cup white sugar
  • 3 tablespoons all-purpose flour
  • 1 tablespoon grated lemon zest
  • 1 tablespoon grated orange zest
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups cooked and mashed sweet potatoes
  • 4 eggs
  • 1/4 cup heavy cream

  • preheat oven to 350 degrees f (175 degrees c).
  • to make crust: in a medium bowl, stir together 1 cup flour, 1/4 cup sugar, 1 1/2 teaspoons lemon zest and 1 1/2 teaspoons orange zest. cut in butter until mixture resembles coarse crumbs; stir in coconut. mix together egg yolk and water; stir into flour mixture. form dough into ball.
  • press slightly less than half the mixture the bottom of a 9 inch springform pan with the sides removed. place on shallow baking sheet and bake for 15 minutes or until lightly browned. let cool. attach sides pan and press remaining mixture all the way up the sides of the pan; set aside.
  • to make filling: in a large bowl, combine cream cheese, 3/4 cup sugar, 3 tablespoons flour, 1 tablespoon lemon zest, 1 tablespoon orange zest, cinnamon and nutmeg. beat until smooth. blend in sweet potatoes and eggs. stir in heavy cream. pour mixture into prepared crust. place pan in a shallow baking sheet.
  • bake in preheated oven for 65 to 70 minutes or until center of the pie is nearly set.
  • cool in pan on wire rack for 15 minutes. using a small spatula or knife, loosen the crust from the sides of the pan; cool for an additional 30 minutes. remove sides of the pan and allow pie to cool completely. cover and refrigerate for at least 4 hours before serving.

  • 3 eggs
  • 1 1/4 cups vegetable oil
  • 2 cups white sugar
  • 2 1/2 cups self-rising flour
  • 2 apple - peeled, cored, and chopped
  • 1 cup shredded coconut
  • 1 cup chopped walnuts
  • 1/4 cup butter
  • 1/2 cup packed brown sugar
  • 1/3 cup milk

  • blend eggs, oil, and sugar until creamy. add flour, a little at a time. blend well. batter will be stiff. fold in apples, coconut, and nuts.
  • pour into prepared pan. bake in preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean. let cool 30 minutes in pan, then remove.
  • to make topping: melt butter or margarine, sugar, and milk in saucepan over high heat. bring to boil for 3 minutes. pour over cooled cake.

coconut pumpkin nut bread

Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 cups packed dark brown sugar
  • 2/3 cup white sugar
  • 1 (15 ounce) can pumpkin puree
  • 1 cup vegetable oil
  • 2/3 cup coconut milk
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 1/2 teaspoons ground cinnamon
  • 2/3 cup unsweetened flaked coconut
  • 1 cup chopped walnuts, toasted

  • preheat oven to 350 degrees f (175 degrees c). grease and flour two 8 x 4 inch loaf pans.
  • combine flour, sugars, pumpkin, oil, coconut milk, baking soda, salt, and spices. mix until well blended. fold in coconut and nuts. pour into prepared pans.
  • bake for about 1 hour and 15 minutes, or until an inserted toothpick comes out clean. remove from oven. cover with foil tightly, and allow to steam 10 minutes. remove foil, and turn out cooling rack. tent lightly with the foil, and allow to cool completely.
