Pcp Pie

Ingredients

  • 2 cups white sugar
  • 4 large eggs, beaten
  • 1/2 cup butter, melted
  • 1 tablespoon yellow cornmeal
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 (20 ounce) can crushed pineapple, drained
  • 1 cup chopped pecans
  • 1 cup flaked coconut
  • 1 (9 inch) prepared pie crust

    Preparation Time: 10 mins Cook Time: 50 mins Ready Time: 1 hr

  • preheat oven to 350 degrees f (175 degrees c).
  • beat sugar, eggs, butter, cornmeal, flour, and vanilla extract together in a large bowl until smooth; add pineapple, pecans, and coconut and stir. pour the filling into the prepared pie crust.
  • bake in preheated oven until the center of the pie is nearly set, 50 to 60 minutes.
