Macadamia Mahi Mahi

- 1 1/2 lbs mahi mahi, rinsed and patted dry
- 1 cup salted macadamia nut, chopped, divided
- 1 cup unsweetened coconut milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 preheat oven to 350.
- 2 cut mahi mahi into 1" wide pieces and place pieces in a single layer in a 13" x 9" baking dish. sprinkle with salt and pepper.
- 3 sprinkle 1/2 cup chopped macadamia nuts on top of mahi mahi. pour coconut milk over top.
- 4 bake at 350 for about 18 minutes or until opaque.
- 5 sprinkle with remaining 1/2 cup nuts just before serving.
