Gardenia Pie

Ingredients

  • Servings: 1
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 2 eggs
  • 2 tablespoons distilled vinegar
  • 1 tablespoon unsalted butter, melted
  • 1/2 cup chopped pecans
  • 1/2 cup golden raisins
  • 1/2 cup flaked coconut
  • 1 (9 inch) pie shell

Recipe

  • preheat oven to 325 degrees f (175 degrees c).
  • in a large bowl, combine sugar, salt, eggs, vinegar and melted butter. beat well. fold in pecans, raisins and coconut.
  • pour into unbaked pie shell. bake on lower rack in oven at 325 degrees f (165 degrees c) for 30 minutes. top should brown lightly.
  • store in refrigerator.
