Gluten-free Coconut Cake

- 1 1/2 cups white sugar
- 1 cup flaked coconut
- 1/2 cup chopped walnuts
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon xanthan gum
- 1 teaspoon salt
- 1 cup coconut milk
- 1 cup vegetable oil
- 4 eggs
- 1 teaspoon vanilla extract

- preheat oven to 350 degrees f (175 degrees c). grease and flour a 9x13-inch baking dish.
- whisk flour, sugar, coconut, walnuts, baking powder, baking soda, xanthan gum, and salt together in a bowl. add coconut milk, vegetable oil, eggs, and vanilla extract; mix until batter is smooth. spread batter into the prepared baking dish.
- bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes.
