Creamy Lemon Coconut Pie

Ingredients
- 1 1/2 cups sweetened condensed milk
- 1/2 cup lemon juice
- 1 fresh lemon rind, of grated
- 2 egg yolks
- 1 cup shredded coconut
- 1 8 inch pie crust (vanilla is wonderful)
- 2 egg whites
- 4 tablespoons sugar
- 1/2 teaspoon vanilla extract
Recipe
- 1 beat until frothy,gradully add sugar,beating until stiff.
- 2 add vanilla extract,combine.
- 3 pile on top of pie.
- 4 heat oven to 350.
- 5 combine the first 4 ingredients,mixing well.
- 6 add 3/4 cup of the coconut,and pour into pie crust.
- 7 cover layer with the prepared meringue.
- 8 sprinkle remaining coconut over topping.
- 9 bake 10-15 minutes.
