Creamy Lemon Coconut Pie

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 1/2 cups sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 fresh lemon rind, of grated
  • 2 egg yolks
  • 1 cup shredded coconut
  • 1 8 inch pie crust (vanilla is wonderful)
  • 2 egg whites
  • 4 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Recipe

  • 1 beat until frothy,gradully add sugar,beating until stiff.
  • 2 add vanilla extract,combine.
  • 3 pile on top of pie.
  • 4 heat oven to 350.
  • 5 combine the first 4 ingredients,mixing well.
  • 6 add 3/4 cup of the coconut,and pour into pie crust.
  • 7 cover layer with the prepared meringue.
  • 8 sprinkle remaining coconut over topping.
  • 9 bake 10-15 minutes.
