Impossible Pina Colada Pie

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1/4 cup milk
  • 1/4 cup rum
  • 2 tablespoons margarine, softened
  • 4 eggs
  • 1 (15 ounce) can cream of coconut
  • 1 (8 ounce) can crushed pineapple, well drained
  • 2 cups flaked coconut
  • 1/2 cup bisquick

Recipe

  • 1 preheat oven to 350ºf.
  • 2 grease a 10 x 1 1/2-inch pie plate.
  • 3 beat all ingredients, except 1 cup coconut, 30 seconds in blender on high or 1 minute with hand beater.
  • 4 pour into pie plate.
  • 5 sprinkle with reserved coconut.
  • 6 bake until knife inserted in center comes out clean, 40 to 45 minutes.
  • 7 garnish with sliced pineapple and whipped cream, if desired.
  • 8 keep refrigerated.
