Homemade Soaked Granola

Total Time: 52 hrs Preparation Time: 48 hrs Cook Time: 4 hrs

Ingredients

  • 8 cups rolled oats
  • 1/2 cup butter, melted
  • 1/2 cup coconut oil, melted
  • 1 1/2 cups whole milk yogurt
  • 2 cups water
  • 1/2 cup raw honey
  • 1 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1 cup dried coconut, large flakes
  • 2 cups crispy nuts, chopped
  • 1 cup raisins

Recipe

  • 1 mix oats, butter, coconut oil, yogurt and water together in a large bowl.
  • 2 pat down, cover with a plate and leave at room temperature for 2 days.
  • 3 preheat oven to 200 degrees f.
  • 4 place honey, salt and cinnamon in a small bowl and set in a small pot of simmering water until honey warms and becomes thin.
  • 5 mix honey with oat mixture.
  • 6 place on 2 parchment lined cookie sheets and bake for several hours, until completely dry and crisp.
  • 7 mix with coconut, chopped nuts and raisins.
  • 8 store in airtight container in the refrigerator.
  • 9 serve with whole raw milk or cream diluted with a little water.
