Judy's Coconut Pie

Ingredients
- 2 eggs
- 1 1/2 cups sugar
- 1 pinch salt
- 1/2 cup unsalted butter, softened
- 1/4 cup flour
- 1/2 cup skim milk
- 1 cup shredded coconut
- coconut (for sprinkling on top)
- 9-inch pie shell, unbaked
Recipe
- 1 preheat oven to 325-degrees.
- 2 beat eggs and gradually add sugar and salt: beat until thick and lemon colored.
- 3 blend in butter; then flour and milk.
- 4 add coconut and blend.
- 5 spoon into pastry shell and bake for 45 minutes to 1 hour, or until set and slightly browned.
- 6 about 15 minutes before finished, sprinkle with remaining coconut.
