Judy's Coconut Pie

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • 2 eggs
  • 1 1/2 cups sugar
  • 1 pinch salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup flour
  • 1/2 cup skim milk
  • 1 cup shredded coconut
  • coconut (for sprinkling on top)
  • 9-inch pie shell, unbaked

Recipe

  • 1 preheat oven to 325-degrees.
  • 2 beat eggs and gradually add sugar and salt: beat until thick and lemon colored.
  • 3 blend in butter; then flour and milk.
  • 4 add coconut and blend.
  • 5 spoon into pastry shell and bake for 45 minutes to 1 hour, or until set and slightly browned.
  • 6 about 15 minutes before finished, sprinkle with remaining coconut.
