Hawaiian Coconut Chicken And Rice

Total Time: 1 hr 3 mins Preparation Time: 3 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 lbs boneless skinless chicken thighs, cut in chunks
  • 4 cups chicken broth
  • 1 (13 1/2 ounce) can coconut milk (not cream of coconut)
  • 1 (10 ounce) box frozen spinach (squeeze dry)
  • cooked rice, i use jasmine (oriental rice or medium grain-or long)
  • macadamia nuts
  • crushed pineapple
  • coconut
  • cut banana

Recipe

  • 1 place broth in large saucepan.
  • 2 add chicken and boil for 15 minutes.
  • 3 add coconut milk-gently boil 45 minutes or so.
  • 4 add spinach and cook 2 minutes.
  • 5 place rice in large rimmed platter or bowl.
  • 6 top with chicken mixture.
  • 7 top with condiments
  • 8 aloha.
