Ingredients
- 1 1/2 cups flour
- 1 cup oatmeal
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 cup raisins
- 1 cup nonfat milk
- 1/4 cup oil (mct) or 1/4 cup coconut oil (melted)
- 1 egg, lightly beaten
- 1 teaspoon vanilla
Recipe
- 1 heat oven to 400 degrees.
- 2 mist muffin tin with cooking spray.
- 3 in large bowl - mix first 5 ingredients.
- 4 in small bowl - mix last 4 ingredients.
- 5 add wet to dry and stir to moisten.
- 6 fill 12 muffin cups almost full.
- 7 bake 18 to 20 minutes.
- 8 cool 5 minutes on wire racks before.
- 9 removing from pan.
