Diet Muffins

Total Time: 33 mins Preparation Time: 10 mins Cook Time: 23 mins

Ingredients

  • 1 1/2 cups flour
  • 1 cup oatmeal
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 cup raisins
  • 1 cup nonfat milk
  • 1/4 cup oil (mct) or 1/4 cup coconut oil (melted)
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla

Recipe

  • 1 heat oven to 400 degrees.
  • 2 mist muffin tin with cooking spray.
  • 3 in large bowl - mix first 5 ingredients.
  • 4 in small bowl - mix last 4 ingredients.
  • 5 add wet to dry and stir to moisten.
  • 6 fill 12 muffin cups almost full.
  • 7 bake 18 to 20 minutes.
  • 8 cool 5 minutes on wire racks before.
  • 9 removing from pan.
