Mayonnaise With Coconut Oil

Ingredients

- 3/4 cup coconut oil
- 1/4 cup olive oil
- 1 egg
- 1/2 tablespoon vinegar or 1/2 tablespoon lemon juice
- 1/2 teaspoon garlic salt or 1/2 teaspoon pepper
- 1 dash pepper
- 1/2 teaspoon dijon mustard (optional)
Recipe
- 1 melt the coconut oil in the micro or on stove top.
- 2 mix coconut and olive oil.
- 3 put all but the oils in blender or food processor container.
- 4 whiz till frothy.
- 5 slowly, very slowly, pour in the oil mix while the blender or processor is running.
- 6 this thickens quickly; you will have to stop and scrape down, and it may not take all the oil mix.
- 7 once all is mixed put in covered container in fridge.
- 8 can be used in any recipe calling for mayo.
- 9 you may like more mustard, more salt, less, etc.
- 10 this is thicker than a typical homemade mayo, more like store bought.
- 11 (most large wal-marts and groceries carry coconut oil near the crisco; it is an oil but is solid at room temp.).
