Jam & Coconut Filled Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 2 1/2 cups flour
  • 3 teaspoons baking powder
  • 2/3 cup caster sugar
  • 1 egg
  • 1 1/4 cups coconut
  • 1 teaspoon vanilla extract
  • 1 1/4 cups milk
  • 3 tablespoons jam (any kind you like!)
  • 6 tablespoons vegetable oil

Recipe

  • 1 heat oven to 400°.
  • 2 sift together flour and baking powder; stir in sugar and coconut.
  • 3 beat the egg, vanilla extract, milk and oil together.
  • 4 add the dry mix to the wet mixture.
  • 5 mix just until combined.
  • 6 drop a large tablespoon of batter into each tin.
  • 7 add a teaspoon of jam to each and the rest of the batter.
  • 8 sprinkle the tops with a little bit of coconut.
  • 9 bake 25-30 minutes or until well risen and firm to the touch.
