Healthy Peanut Butter Banana Oatmeal Cookies

Ingredients
- 1 cup mashed bananas or 2 ripe bananas
- 1/3 cup peanut butter (natural if you have it)
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups old fashioned oats
- 1/2 cup shredded coconut
Recipe
- 1 preheat oven to 350.
- 2 mash bananas with a fork and mix in peanut butter, apple sauce, vanilla, salt, and cinnamon.
- 3 stir in oats and coconut.
- 4 drop by tablespoon onto a non stick cookie sheet (lined with parchment paper or sprayed with non-stick spray). i use a small cookie scooper.
- 5 flatten a bit to shape the cookie (they don't rise or spread at all when baking).
- 6 bake for 12-15 minutes, rotating the pan halfway through.
- 7 allow to cool, and enjoy!
