Healthy Peanut Butter Banana Oatmeal Cookies

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 cup mashed bananas or 2 ripe bananas
  • 1/3 cup peanut butter (natural if you have it)
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups old fashioned oats
  • 1/2 cup shredded coconut

Recipe

  • 1 preheat oven to 350.
  • 2 mash bananas with a fork and mix in peanut butter, apple sauce, vanilla, salt, and cinnamon.
  • 3 stir in oats and coconut.
  • 4 drop by tablespoon onto a non stick cookie sheet (lined with parchment paper or sprayed with non-stick spray). i use a small cookie scooper.
  • 5 flatten a bit to shape the cookie (they don't rise or spread at all when baking).
  • 6 bake for 12-15 minutes, rotating the pan halfway through.
  • 7 allow to cool, and enjoy!
