Grandma's Coconut Custard Pie

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 4 eggs, slightly beaten
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 3 cups milk, scalded
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon ground nutmeg
  • 1 cup flaked coconut
  • 1 flaky pastry crust (aunt nancy's)

Recipe

  • 1 combine eggs, salt and sugar.
  • 2 add milk and vanilla slowly.
  • 3 line pie pan with prepared pastry and pour in filling.
  • 4 sprinkle with nutmeg and coconut.
  • 5 bake at 450 degrees for 10 minutes, then reduce heat to 325 degrees and bake 30-40 minutes or until knife inserted in center of pie comes out clean.
