Mama's Mango Bread

Ingredients
- Servings: 16
- 2 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 1/2 cups sugar
- 1/2 teaspoon salt
- 3 eggs, slightly beaten
- 1 teaspoon vanilla
- 1 cup salad oil
- 2 cups mangoes, diced (not too ripe or stringy)
- 1/2 cup walnuts, chopped
- 1/2 cup coconut, fresh or frozen
- 1/2 cup raisins
Recipe
- 1 preheat oven to 350 degrees.
- 2 in a mixing bowl combine first 5 ingredients.
- 3 to them, add all remaining ingredients.
- 4 grease 2 large loaf pans and bake for 55-60 minutes or until a toothpick (or fork) poked into the center comes out clean.
