Coconut Cream Pie

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • 1 1/2 cups scalded milk
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 3 tablespoons cornstarch
  • 3 egg yolks
  • 1 tablespoon butter
  • 1/2 cup shredded coconut
  • 1/2 teaspoon vanilla

Recipe

  • 1 add sugar, cornstarch, and salt to beaten egg yolks.
  • 2 pour the scalded milk into this; return to double boiler, stir and cook until thickened.
  • 3 add butter, coconut, and vanilla.
  • 4 pour into a pie tin lined with pastry. bake.
  • 5 cover with meringue.
