Banana Coconut Loaf

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 cup coconut
  • 1 cup caster sugar
  • 1 1/2 cups self-raising flour
  • 1 cup mashed banana
  • 1 cup low-fat coconut milk
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 170 degrees celsius.
  • 2 grease loaf pan.
  • 3 combine dry ingredients.
  • 4 combine bananas, milk, egg and vanilla separately.
  • 5 pour into flour mixture and combine.
  • 6 put into to tin and bake for 1 hour until skewer inserted comes out clean.
  • 7 serve as you would toast.
