Ingredients

- 1 cup coconut
- 1 cup caster sugar
- 1 1/2 cups self-raising flour
- 1 cup mashed banana
- 1 cup low-fat coconut milk
- 1 egg, lightly beaten
- 1 teaspoon vanilla extract
Recipe
- 1 preheat oven to 170 degrees celsius.
- 2 grease loaf pan.
- 3 combine dry ingredients.
- 4 combine bananas, milk, egg and vanilla separately.
- 5 pour into flour mixture and combine.
- 6 put into to tin and bake for 1 hour until skewer inserted comes out clean.
- 7 serve as you would toast.
