Cindy's Orange Bran Flax Muffins

Ingredients
- 1 1/2 cups oat bran
- 1 cup all-purpose flour or 1 cup whole wheat flour
- 1 cup wheat bran or 1 cup oatmeal
- 1 cup ground golden flax seed
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 oranges, quartered and seeded (do not peel)
- 1 cup brown sugar
- 1 cup buttermilk or 1 cup soymilk
- 1/2 cup olives or 1/2 cup canola oil
- 2 eggs
- 1 teaspoon baking soda
- 1 1/2 cups raisins (optional)
- 1 cup shredded coconut (optional)
- 1 cup fresh spinach (optional)
Recipe
- 1 preheat oven to 375 degrees.
- 2 prepare two 12 cup muffin pans by lining with paper liners or spraying with cooking spray.
- 3 in a large bowl, combine oat bran, flour, flaxseed, wheat bran, baking powder, and salt. set aside.
- 4 in a blender or food processor, combine oranges, brown sugar, buttermilk, oil, eggs, and baking soda. (if using spinach add to ingredients in blender).
- 5 blend well.
- 6 pour orange mixture into dry ingredients. mix until well blended.
- 7 stir in raisins and/or coconut, if using.
- 8 divide batter evenly among muffin cups.
- 9 bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.
- 10 cool in pans for 5 minute before removing to a cooling rack.
