Chocolate Chip Oatmeal Muffins

Ingredients
- 3 cups oat flour
- 1 cup coconut flour
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons sea salt
- 1/4 cup canola oil
- 1/2 cup honey
- 1/4 cup molasses
- 1 teaspoon vanilla
- 1 1/2 cups buttermilk
- 1 cup milk
- 6 egg whites
- 4 egg yolks
- 2 cups chocolate chips
Recipe
- 1 preheat oven to 375*. prepare two muffin tins with paper/parchment liners.
- 2 combine oat flour, coconut flour, baking powder, baking soda, and sea salt.
- 3 in a separate bowl, beat egg whites until they form peaks.
- 4 in a third bowl, whisk together canola oil, honey, molasses, vanilla, buttermilk, milk, and egg yolks.
- 5 add the wet mixture to the dry and mix until just combined.
- 6 stir in the chocolate chips.
- 7 fold in the egg whites using a flat spatula.
- 8 using a disher, scoop into lined muffin tin (fill 75%-100%).
