Chocolate Hedgehog

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 3 2/3 cups plain sweet biscuits, crushed
  • 1 cup unsalted butter
  • 1 cup caster sugar
  • 2/3 cup desiccated coconut
  • 1/2 cup cocoa powder, sifted
  • 2 eggs, lightly beaten
  • chocolate frosting
  • 1/4 cup cocoa powder
  • 1 1/2 cups icing sugar
  • 1 tablespoon glucose syrup
  • 6 teaspoons butter
  • 1 tablespoon water

Recipe

  • 1 grease a 19 cm x 28 cm x 2 cm baking tray.
  • 2 put crushed biscuits in a bowl.
  • 3 melt the butter with the sugar, coconut and cocoa in a saucepan on low heat.
  • 4 bring to the boil and boil for about 2 minutes.
  • 5 allow the mixture to cool.
  • 6 the mixture may look separated but ignore this.
  • 7 whisk in the eggs, this improves the mixture again.
  • 8 pour this mixture over the crushed biscuits and stir until it is evenly combined.
  • 9 pour into the tray and let cool.
  • 10 spread over frosting and sprinkle nuts, hundreds and thousands or chocolate chips.
  • 11 cut into squares.
  • 12 chocolate frosting put cocoa powder, icing sugar, syrup and butter in a bowl and mix together.
  • 13 add the water, a little at a time and beat all the time.
  • 14 beat for about 15 minutes on high speed until it is light and fluffy.
  • 15 if it looks curdled just add a little more icing sugar.
