Chocolate Hedgehog

Ingredients
- 3 2/3 cups plain sweet biscuits, crushed
- 1 cup unsalted butter
- 1 cup caster sugar
- 2/3 cup desiccated coconut
- 1/2 cup cocoa powder, sifted
- 2 eggs, lightly beaten
- chocolate frosting
- 1/4 cup cocoa powder
- 1 1/2 cups icing sugar
- 1 tablespoon glucose syrup
- 6 teaspoons butter
- 1 tablespoon water
Recipe
- 1 grease a 19 cm x 28 cm x 2 cm baking tray.
- 2 put crushed biscuits in a bowl.
- 3 melt the butter with the sugar, coconut and cocoa in a saucepan on low heat.
- 4 bring to the boil and boil for about 2 minutes.
- 5 allow the mixture to cool.
- 6 the mixture may look separated but ignore this.
- 7 whisk in the eggs, this improves the mixture again.
- 8 pour this mixture over the crushed biscuits and stir until it is evenly combined.
- 9 pour into the tray and let cool.
- 10 spread over frosting and sprinkle nuts, hundreds and thousands or chocolate chips.
- 11 cut into squares.
- 12 chocolate frosting put cocoa powder, icing sugar, syrup and butter in a bowl and mix together.
- 13 add the water, a little at a time and beat all the time.
- 14 beat for about 15 minutes on high speed until it is light and fluffy.
- 15 if it looks curdled just add a little more icing sugar.
