Island Macadamia Coconut Bars

Ingredients

- 1/2 cup butter, softened
- 1/2 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups unbleached all-purpose flour
- 1 cup packed light brown sugar
- 1/4 cup unbleached all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup macadamia nuts, chopped
- 3 1/2 ounces sweetened flaked coconut
- 1 cup semi-sweet chocolate chips
Recipe
- 1 preheat the oven to 350*.lightly butter a 13x9 baking pan -- set aside.
- 2 to make cookie layer:.
- 3 in a large bowl, cream the butter, brown sugar, and vanilla with an electric mixer until light.
- 4 add the flour and beat just until blended. with floured fingertips, press the cookie dough into an even layer in the prepared pan.
- 5 bake for about 10 minutes or until the edges are lightly browned.
- 6 cool on wire rack -- leave the oven on.
- 7 to make the coconut layer:.
- 8 in a large bowl, beat the brown sugar, flour, salt, vanilla and eggs with an electric mixer until smooth.
- 9 stir in the macadamia nuts and the coconut.
- 10 spread over the cooled cookie layer.
- 11 sprinkle the top evenly with the chocolate chips.
- 12 bake for 20-25 minutes, or until the edges are golden brown.
- 13 cool thoroughly before cutting into bars with a small sturdy knife.
