Coconut Corn Bread

Ingredients

- 1/2 cup diced dried pineapple
- 2 tablespoons dark rum or 1/4 teaspoon rum flavoring
- 1/3 cup sugar
- 1/3 cup butter, softened
- 2 eggs
- 1 cup yellow cornmeal
- 1 cup flour
- 1 cup coconut milk
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1 cup dried shredded coconut
Recipe
- 1 heat oven to 375°.
- 2 grease round pan, 9x11/2".
- 3 mix pineapple and rum in small bowl; set aside.
- 4 beat sugar and butter in large bowl until light and fluffy.
- 5 add eggs, one at a time, beating until well blended.
- 6 stir in remaining ingredients except coconut; beat about 30 strokes or until smooth.
- 7 fold in pineapple mixture and coconut.
- 8 pour into pan.
- 9 bake 35-40 minutes or until top is golden brown and toothpick comes out clean.
- 10 cool 20 minutes; remove from pan.
- 11 cool completely on wire rack before slicing.
