Healthy Gluten And Dairy Free Chocolate Chip Cookies/bars

Ingredients
- 1 cup oat flour or 1 cup millet flour
- 1/2 cup coconut flour
- 1 cup almond meal
- 3/4 cup almond milk
- 1/2 cup sunflower seed butter
- 1/8 teaspoon xanthan gum
- 1/4 cup honey
- 1/2 cup chocolate chips
Recipe
- 1 mix all ingredients well. if mixture is too dry/clumpy add a little extra almond milk. form into 1 inch balls, and press surface lightly with fork to flatten a little.
- 2 cook at 350 for 14 to 16 minutes.
- 3 cookies will not rise or enlarge much in size, and they will be dense - more like an energy bar consistency.
- 4 i've also made this as true bars - just press into a pan, bake about 20 min and cut into rectangles.
- 5 the recipe works fine with regular flour, and you may substitute any type of nut butter. we just happen to be a gluten-free household, and i like the flavor of the coconut flour in the cookies.
