Coconut Banana Bread

Ingredients

- 1/2 cup shortening (i always use butter) or 1/2 cup butter (i always use butter)
- 1 cup sugar
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 ripe bananas
- 1/2 cup pecans or 1/2 cup walnuts
- 1/2 cup unsweetened coconut
Recipe
- 1 preheat oven to 325 degrees f (165 degrees c). lightly grease an 8x4 inch loaf pan.
- 2 in a large bowl, cream the shortening and sugar. sift in the flour, baking soda coconut, pecans or walnuts and salt. blend in the mashed bananas. pour batter into prepared pan.
- 3 bake in preheated oven for 60 minutes, or until a knife inserted into center of loaf comes out clean.
