Lemon Love Knots

Ingredients

- 1 3/4 cups unbleached all-purpose flour
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1 cup powdered sugar
- 1 large egg
- 1 cup sweetened flaked coconut
- 1 tablespoon grated lemon, rind of
- 2 cups powdered sugar, sifted
- 1/4 cup fresh lemon juice
- 1/3 cup sweetened flaked coconut
Recipe
- 1 preheat the oven to 350*.lightly butter a 13x9 baking pan and set aside.
- 2 to make the batter:.
- 3 sift the flour, and salt together, set aside.
- 4 in a large bowl, cream together the butter and powdered sugar with an electric mixer until light and fluffy.
- 5 beat in the egg until blended.
- 6 gradually add the flour mixture until blended.

- 8 spread the batter in the prepared pan.
- 9 bake on the center rack for 20-25 minutes, or until the edges begin to pull away from the sides of the pan.
